- Appearance/Visual: Bright pale gold color with golden highlights. Fine and persistent bubbles, forming a delicate mousse (or “collar”).
- Nose/Aroma: Medium-high aromatic intensity. Aromas of white fruits (white peach, pear), citrus fruits (lemon, grapefruit), floral notes (acacia, hawthorn), delicate pastry notes (brioche, toasted bread), and a touch of nuts (hazelnut). Hints of green apple can also be detected.
- Palate/Taste: Fresh and lively attack. Medium body with a creamy texture. Flavors of white fruits and citrus, with a spicy touch (ginger), notes of brioche and nuts (hazelnut). Balanced acidity provides freshness. Long and persistent finish with an elegant mineral touch.
Food Pairing
A very versatile Champagne. Ideal as an aperitif. Pairs excellently with oysters, seafood, white fish, sushi, poultry, complex salads, and soft cheeses. Also complements not-too-sweet desserts well.
